Alternately, what would people consider being a reasonable number of recipes for a small edition cookbook? (Keeping in mind self-printed and hand-bound.)

At least 30, ideally 50. Look at the lulu set up for cook books (I realize you aren't doing it this way at all, but you can see how they set up their basic cookbook templates, which is kinda cool and gives you some ideas about how people prefer them.)

My gut reaction for a small book was 20 - not sure why but there you go.
